Chicken Soup



Yesterday night , I have some chicken and soup ingredient left over from the weekend cooking so I decided to made it for my dinner..

Igredients:
2 of chicken ( chest n hip)
Ham
1.5 litres Water
Tomatos
Onion
Carrots
2tsp of soy source
potatoes
Pasley

Preparation:
Boil the water
Cut the tomatoes , onion , potatoes , carrot in a dice shape.
Put the chicken n Ham into the boiled water keep it awhile then put all the vegies into the pot , keep boil till 8-10 mins
Put soy souces and continue boil the soup with medium heat..
Keep i for anothe 5mins , see the verggies and chicken look soft then put the pasley on top.


End result : sweet tasted soup coz of the veggies and chicken.. Thumb up!!

Fruit Tips

Last time my trip in Singapore, my sister recommended me to try fresh passionfruit with yogurt. Once am back to Thailand, my mom bought it from Lemon Farm.. wow, i didnt know the taste was so nice and i like it .. now am a fan of Passion fruit!! I was reading a book this evening .. i found so many tips from eating fruit so i wanna share .. ...


Tomato
Contains Vitamin A , C, and many antioxidants, preventing the risk of prostate cancer Making Skin looking younger and helping in blood circulation


Passionfruit
Reduce the level of Blood Pressure and Cholesterol Leave relieves cold and flu

Lychee

SiNgApoRe 2010




























Finally I'm flying to Singapore after many changed. Fisrt time with Singapore Airlines ,the best Airlines ( many ppl said that ). This is not my first time in Singapore but first time travelling alone and stay like local singaporean..


First lady i met once flight touch down in Singapore was Sis Irene, surprsing me by pick me up from the Airport !!! I miss her alot.. whole afternoon i spend time with her wallking around in shopping centre @ Orchard road xxx ...


First dinner with lovely friend Joyce @ One fullerton.. we have a great dinner and drink till Midnight .. very nice conversation!
















I spend time for lunch n coffee with old colleagues along Orchard road. Evening I went with my dear Sister to pick up her son " Hayden" @ his childcare.. I miss him alot , he grown up and adorable ! I spend time with him and had dinner with my Sis family then back home.











I went to Orchard again to meet some friend for lunch n drink ... Evening my dear sis brought me to German Pub for dinner n drink .. friends come n join us later on.. that 's night was incredible and i got soooooooooo drunk !! Actually the rest was party till morning .. am wasted !













I went to watched Disney On Ice with my Sis's family. Very nice show n i can spent some more time with the lil bro! ..

In the Evening i was expected to go party again but my friend couldnt make it ... am wait wait wait .. so bored. I decided to walk around to GAYLANG 19 to find sth to eat.. wah ! At least i have sth to do that boring night.




Last Day in Singapore , actually was quite fast ... I didint do much things actually .. didnt visit Universal or Resort n some friends didnt meet up also... but i had a great time there , most imp things are i met my dear Sis , lil bro n her family !!!!











I wish i could stay longer n do some more things with them... but anyway i was recharge my battery n can get back to work happily!! So many nice momories which i can smile or laugh everytime whenever i think about it ...

I will try to go back again very soon xxx

AGAR TOFU FRUIT SALAD ( TAO HUAY FRUIT SALAD)




Very hot Sunday in Bangkok , and nothing much to do outside. I slept whole day and feel so bored. Suddenly comes up with an idea to cool me down. The easiest dessert for today is " AGAR TOFU FRUIT SALAD". I got the recipe below from one girl's blogg long time ago. I tried many times and the result it's nice so i sharing the recipe here in my own blogg. I'll make around 12-13cups this time per my brother requested. He'll bring to his office tomorrow(he wants to share to his offc staffs! hahhahah)
Ingredients :
Tao Huay (Serves 12) (7oz. cups)
- 2 cups water
- 2 cups fresh milk (pasteurized milk)
- 2 cups evaporated milk (Carnation)
- 4 tbsp condense milk (or syrup instead)
- 2 tsp gelatin powder
- 2 tsp Agar-Agar powder

Topping
- 1 can fruit salad (or fresh fruits)
- 1/2 cup fresh milk- 1/2 cup evaporated milk (Carnation)

Preparation:

-Add 2cups of water in to the pot then add 2 tsp of gelatin powder, leave it for 15 min.
- After 15 min, add 2 cups of fresh milk, 2 cups of evaporated milk and 2 tsp of Agar-Agar powder, stir constantly over low heat until Agar-Agar powder dissolved.
- Add 4 tbsp of condense milk to bring it sweet taste.
- Keep string and bring it to boil once then off the heat.
- Lets it cool down and set.
- After the milk mixture is warm, filter once and pour into 7 oz cups, about 3/4 of the cups
- Put the cups into refrigerator 1-2 hrs or until the milk mixture turn to be Tao Huay (harden like curd).
- After they are harden, add the cold fruit salad as topping or fresh fruits as desire.
- Cover the cup and put them back into refrigerator to keep them cold.

Tips:
- Do not keep them in the freezer, they will change their texture.
- Taste is great when serve cold!
It's can really help you from the HOT weather outside , try it !

Fried Chicken with Cashew Nuts















Here again on Weekend , today i'm not allow to go outside party because in Bangkok has many protests ! My parents are worried so i have to stay at home. Aside from watching Korean series n rest , i have an idea of cooking some dish for dinner. Stir Fries Chicken with cashew nut is one of my favorite dish. I never try before and today I'm so free and I have alomst all the ingredients so let's try out and see how is it ??


Ingredients
1. 200g Chicken breast meat, cut into bite size pieces
2. 1 Medium size onion, cut into thin slices
3. 3-5 Large dry chilies, deseeded and cut into 1.5 cm (1″) length
4. 1/2 cup unsalted cashews nuts
5. 2 Red long pepper, cut into thin julienne
6. 1 Green banana pepper, cut into thin slices
7. 2 Large cloves garlic, crushed and roughly chopped
8. 3-4 Spring onions, cut into 4cm (1.5″) lengh
9. 1 tbs all propose or tempura flour
10. Sunflower cooking oil (or any neutral taste cooking oil)


Seasoning sauce: (can adjust according to each person taste)
1. 1-1/2 tbs Fish sauce or Light soy sauce
2. 1 tbs Black soy sauce
3. 1 tbs Oyster sauce
4. 1/4 tsp Salt
5. 1/4 tsp Granulated sugar
6. 1/4 cup Stock or water
7. Pinch of ground white pepper


Cooking Steps:


1.Prepare seasoning sauce by mixing all the ingredient. Set aside.
2.Deep fry on medium-low heat the cashews nuts until light golden, drain oil and set aside.
3.Lightly fry dry chilies until shiny and get beautiful deep red color. Set aside.
4.Toss chicken pieces in flour, and fry until light golden. Set aside with the nuts and dry chilies.
5.Cut the long red peppers into julienne, the onion into thin slices and the green banana pepper into thin slices. Set aside
6.On medium heat stir fry the garlic lightly until fragrant
7.Add onions, and stir fry until slightly transparent.
8.Add fried cashews nuts, fried dry chilies and fried chicken, toss everything together and stir-fry for 30 seconds.
9.Add seasoning sauce, stir fry until all the ingredients get a nice color.
10.Add red and green fresh chilies julienne and spring onion. Fast toss everything together, stir frying for another last 30 seconds.
11.Serve hot with Jasmine rice.

Endresult : Looks great and nice taste ! ( ahhahahah) , My brother and my mom love it . Unlucky my father cannot try caz he's not allow to eat chicken but he said it looks nice !

Tom Kha Kai ( Chicken in Coconut Soup)


Tom Kha Gai is one of the classics Thai dish because the soup is so simple to make, my mother made Gai Tom Kha when she ran out of ideas about what to have. I remember the taste from small till now and today I also cook this soup when I'm out of ideas. This is meant to have a milder flavor than a soup like Tom Yum Goong..

All the ingredients are easy to find and i think most of the house will keep this such things in the freeze as well.


2-3 Servings

1- 1/2 cup water
3-4 pc of chili pepper
1 lime
1 tometoe
2-3 pieces of dried chili
1 piecs galangal, crushed
1-2 tablespoon firsh sauce( adjustable)
1/4 cup coconut milk
2-4 springs cilantro
1/4 cup chicken
1-2 kaffir lime leaves (optional)

Direction :
Crush a piece of galangal, 1 inch thick with the flat part of a cleaver or meat tenderizer (or you can be civilized and slice it). Drop the galangal, coconut milk and water, into a 2 quart pot. Let the pot boil at medium to low heat. Reduce heat to simmer and stir frequently, otherwise the coconut milk will curdle. Add sliced chicken , sliced tomatoes and fish sauce. If you have the kaffir lime leaves, remove the central stem from the leaves and add kaffir lime leaves to the soup. Let boil again and turn off the heat


In serving bowls, add crushed fresh Thai chili pepper. Watch out for the crushed chili, it will clear your sinus better than wasabi. If you do not like it hot, do not crush the peppers, just float them for decoration. Squeeze the 1/3 of a lime in each bowl.

Pour the soup in bowls and add cilantro for garnish and decoration with dried chili. Serve hot.



Tips :

As always, if you find the recipe to be too mild, add more fish sauce, chili pepper or lime.

This recipe is always great eaten with hot jasmine rice !!

A Very New Friend !




After so much party during de weekend , my working life starting again ... !!!! I feel so tiring and wanna rest some more.
At working place .. i still alive ! Hahhahahha.. i get used to it already by stay invisible with the environment ;-)
Today i have a dinner with a freind who i just know her only few months! wow actuallly she's the Director of Sales :-)
Her character is so elegance ! I have a good impression at first i met her. it's not oftens once you meet someone and you feel at first sight.. hahahha but i did. I feel like her which i don't know why.. She's so confident and have something different from others ...
After talking to her , i like her more more .. some parts of her is same as mine .. as much as we talk .. we feel we have some in common such as the way of thinking ... some lifestyles.... she's talkative , joyful , cheerful and good attitude!!!! Hhahah we used to work in the same business before too.. that's why !
Good food with good friend ... unbelivable that we can be friend actually ! I get to know her accidently as my boss want to have a corporate rate with Hotel. She's the person in charge of our company account .. Actually it seldom that you can continue talk talk with the sales after the contract has been made but our friendship starting from that time .....
We can have many friends in our life but a friend which you click and feel comfortable to talk is quite difficult to find.. I may be lucky to get such a nice friend like her! Thanks god.
It's was a great dinner for this Year after tough situation in many weeks ago.
At least she gave me some tips of being healthy in the sick organization lol

Banofee' Pie











Today my good friend came back from offshore , so we met up for dinner ... actually suppose to be last Sunday (V'day ) but due to some urgent job that's why we've dinner today instead. (anyway consider ok coz we still meet up)
We went to Anna cafe' after dinner , the recommended dessert is banofee cake , but it finished ;-(

Anyway ,before going home i went to Villa Market Silom. I bought all the ingredients to make Banoffee myself tonight !


Banofee Pie ingredients :

2 cans sweentened condensed milk
6 tbsp butter,melted
150 g crackers,crushed into crumbs.
4 ripe bananas.
1 tbsp lemon juice.
1 tbsp vanilla extract.
75 g chocolate, grated.scant
2 cups thick heavy cream,whipped.


Preparing :
Place the cans of milk in a large pan and cover them with water.
Bring to a boil, then reduce the heat and simmer for 2 hours,topping up the water level regulaty to keep the cans covered.Carefully lift out the hot cans and let cool.
Put the remaining butter into a bowl and add the cracker.
Mix together well, then press the mixture evenly intothe bottom and side of the tart pan .
Peel and slice the bananas and put them into a bowl.
Sprinkleover the lemon juice and vanilla extract and mix gently.
Spreadthe banana mixture over the cracker layer in the pan , then open the cana of condensed milk and spoon the contents over the bananas.
Sprinkle over 50 g of chocolate, then top with a thick layer of whipped cream.
Scatter over the remaining chocolate and serve.

End result : Look great and the taste is nice too (hahhahah.. it's compliment from my dad ,the first one who try this pie ! Anyway let see how my friends comment about it tomorrow ;-)

Strawberry Marshmallow Pie










Per my mom request for a dessert on Valentines' Day because she has a party at her friends house and everybody need to bring one food for the party so she asked my help.

Since I still have no oven so this is the best recepi i can made for her " SB Marshmallow Pies" actually i love this SB Mashmallow since i try from my dearest sister .. I tried to make it 2 times alrd but failed with the ingredients and timing . Let's me try again one more for my mom's party !

All the ingredients I was using as same as the original one:

Base:
200g digestive biscuits

80g melted butter
Crushed biscuits & mix well w/butter. Refrigerate for later use.

Marshmallow filling:

150g. Marshmallow
300ml UHT milk (full cream milk
200ml Whipping cream
2 tsp Gelatine powder
Put all the ingredients into a pot & boil over small fire till gelatine is dissolved.

Jello topping:
½ pkt Jello
200ml Water
2 tsp Gelatine powder

Boil all ingredients until dissolved.

Assembling the pies:

Pour marshmallow filling into d prepared baking tin w/biscuit base.
Put in freezer until slightly harden but not totally frozen
Take it out & arrange sliced fresh strawberries.
Put it back to freezer to harden a little.
slightly harden take it out & spoon d cooled Jello on top.
Put in fridge to chill. Cut into small pieces to serve.

Endresult : actually failed again due to the Mashmallow doesnt set properly and i put the jello to fast then the mashmallow and the jello layer mixed up.

The outlook doesnt same as the original one but the tasted was wonderful.. Hahhahah
My mom friends love it so much and i still have some extra to let the offc try on Monday..
They said it fabulous! Yeah Yeah ;-)

Blueberry Cheese Pie











This is very first Pie of this year, actually i want to do muffin since last time was failed with the ingredient and the muffin was totally flatted.
However i still cannot make any baking since my lovely oven was spoilled. It's time to get a new oven , Dad!
Suddenly comes up with an idea for easy recipe " Blueberry Cheese Pie "
Blueberry cheese pie is the best choice if you don't have an oven. Moreover, long time already i never do it. Better make it as a dessert for Sunday night!

Ingredient :
1. Preze cracker 2-3 box (125g) Or Oreo 1 rolls
2. Cream Cheese 1box
3. Sugar 3-5 table spoons
4. Lemon 1/2" pcs
5. Salt butter 1/2" pcs
6. Blueberry 1 can
Preparing :
1. Mash the cor Oreo into small pieces
2. Boil the butter till melt
3. Mix the mash cracker with the butter
4. Put the cracker as a pie based and keep in the freeze around 30mins
5. cut creem cheese into small pieces
6. Mix with sugar and lamon , mix together till it become soft.
7. put the cream cheese on the top of the cracker based and keep for anothe 2 hours in the freeze.
8. Put the Blueberry on the top of cheese pie before serve.


End result : it really wonderful taste and look good , hahhahaha ! It's consider as succesful caz all my family members love it ! I can bring to offc sharing with the colleague and see what they're comments.
Anyway , Blueberry cheese pie never failed me !! Hahhahaha ^_~

Inspiration


This is my very first blog. hahhaha .. Actually i have no idea what to write in here also. As my first time to published my writing n my story then I'd like to thanks one lady who inspired me about creating this blog ..

I must say she 's my inspiration and my idol as well so my very first blog will dedicated to her. Sister Irene!!

Actually we knew each other for a few year but never get closed together till last December i had a chance to know her more. Its really interesting to meet someone n talk for the first time about personal stories with comfortable feeling. Moreover we realised that we had some common in cooking n baking.

It was a wonderful time i spent with her n her family during last Christmas.Many advices and good stories were sharing between her and me. During that time i had a very very tough situation and feel so depressed but she was comfort me and cheer me up .. with the word
" Make yrself happy!! "

With her decent looked but inside are full of power n passionate.!! She is wonderful gift I've got last year , a great sister n friend which i never think i'll have in my life !!

I had so much fun and had great time on last December !
